I'm having an issue with the newest version 3.5.4.692 that is very similar to an issue I was having with 3.1.3.597 last September. It seem that the server locks up and reports back to senders mail system "Too many connections on the server. please try again later. Bye...". Looking at the logs it seems to rotate thru the following messages.

07/31/07 19:42:21:437 -- (2216) Notice - Peer Thread found not connected during KillPeerThread. Forcing removal.

Scott,

I do know that Roberto is aware of this as I sent logs.  The tempory work around is to update to the Build 700 AND set the following ini settings:

SpamPDFMaxPagesToScan=0  (Disables PDF Scanning for now)
BlockBlankEmailsWithAttachments=*.pdf,*.xls,*.zip  (Enables the detection of "Blank" messages with the listed extensions)

The second feature catches at least 80% of the PDF Spam so the loss of the image scanning inside of PDF's is not a disaster.

I am not 100% sure your issue is the same as mine but it sure looks the same.

The Desperado
Dan Seligmann.
