Is it possible it change the default path of the 'queue' folder ?
I've checked all the .ini files and cant seem to find a way to set this like I can the other folders.

Sorry - the queue directory is hardcoded in SpamFilter to be located directly underneath the installation directory, and cannot be modified.

Roberto, any chance we can add that to a wishlist to be customizable in a future release?

Yes - we've added it already as it's pretty simple to implement. It will probably be done during the next minor release.

FYI the feature has been implemented already in our internal alpha build. We will be publicly releasing a new version of SpamFilter within the next week or two that will feature a new antivirus plugin from Cyren (also known as F-Prot), a 64bit version of SpamFilter, and as mentioned your customization for the queue as well.
