Anyone running spamfilter service on two (or more) servers pointing to one quarantine db?  could it be done?

Yes, it can be done, SpamFilter was designed taking into consideration this setup. You will simply need to install SpamFilter on the second server, and then run the 1-2-3 step database wizard. Both SpamFilter installs will point to the same database and use the same quarantine tables. Each one knows about which emails it "owns" and will take care of deleting them / deliver them to the end users.

As Roberto said, yes, it can be done and it works very well, but it does generate twice the load on the database server so be prepared with that. I wonder though if using two different databases on a SQL server is any faster than two installs using the same database? If it is, it may be better to use individual databases for each install rather than the same one. Roberto, any performance testing or thoughts in that regard.

Well ... I have 9 instances of SpamFilter all using the same Database.  No problems at all.

Unless the SQL server is really "stressed out", we'd recommend using the same database for the easier management this will allow. If using a single database, all SpamFilter instances will be able to see all of the spam in the quarantine caught by the various servers. The web interface will also be able to show all of the spam without the need to issue complex queries to combine results form the various SQL servers.
